ちと面白い話。
ミシュランのスタッフが日本に来てビックリしたそうな。
寿司も、うどんも、天ぷらもみんな一つの店で食べられると思ってたら違ってたから。
「日本食の専門性と多様性に驚かされた」って。

ぶっちゃけ権力者のためのフランス料理は、椅子に座りさえすれば、
望む料理や酒はなんでもでてきて、皿の配膳からナイフやフォーク交換まで全部家来がやる。
「美食」が権力者側にある宮廷料理の基本はコレ。

でも「美食」が民衆側にあった日本食はそれぞれの料理が専門的に発展したんだわ。
根本的に違うんだよね
